Almost Forgot...Cooking

The tyropitas turned out very well although there must have been a misprint in the recipe somewhere b/c I ended up with a TON of extra filling. Not sure what happened there but they are very tasty and most of them made it to the freezer for Mother's Day. Next up, fruit salad which I'll make on Saturday and then the quiche on Sunday. Wish me luck. I may take pics if it ends up looking nice. :)

I used to make a dish called Lasagna Roll Ups and no matter how I cut back I always ended up with WAY more filling than I needed. It drove me crazy! I don't like waste...even tho I grew up out here in the NW I was raised by 'transplanted' New Englanders who grew up in the Great Depression and taught us kids to be thrifty and "waste not". I'd end up dumping the extra in the trash. Now, with my kids grown, my Dear Hubby and I are such simple eaters...grilled cheese sandwiches and soup are a mainstay. I let my d-i-l, who LOVES to cook, take on the big holiday meals. She provides the hot dishes, I provide the cold...works out great for both of us.

Oh...major brain fart! I was coming to thank you for your input about the blogging friend who seems headed for a major meltdown. Everyone who's commented so far agree with you so I'm thinking about what I'm going to say...then I'll bite the bullet and send off an email tomorrow. Thank you! :o)

Jared makes a bitchin fruit dip out of cream cheese, brown sugar, maple syrup, and marshmellow cream. Its amazing. Damn it, now I want some.

We had the parents over for breakfast this morning ... I made a ton of bacon, scrambled eggs (my own "secret recipe), pancakes, sausage, bagels, coffee .... my god, I'm getting tired again!
